There are few things as satisfying as fresh apple cinnamon coffee cake enjoyed with a hot beverage on cool fall day. This easy apple cinnamon coffee cake recipe puts a healthy spin on this usually indulgent treat by using Kodiak Cakes Buttermilk Power Cakes instead of traditional all-purpose flour. And for even more flavor, we call for a streusel filling and sweet glaze to be poured over this delectable cake, just remember to make enough to share!

Ingredients

Coffee Cake

  • 1 cup plus one tablespoon unsalted butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoon pure vanilla extract
  • 3 cups Kodiak Cakes Buttermilk Power Cakes Flapjack and Waffle Mix
  • 1 teaspoon baking soda
  • 2 cups plain Greek yogurt
  • 2 Granny Smith apples, cored, peeled, and chopped
  • 1 teaspoon cinnamon
  • Flour for greasing pan

Streusel Filling

  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup chopped walnuts or pecans
  • 1 tablespoon cinnamon

Glaze

  • 2 tablespoons unsalted butter
  • 2 tablespoons milk
  • 1-1/4 cups powdered sugar
  • 2 teaspoon pure vanilla extract
  • Pinch nutmeg
  • Pinch cinnamon

Directions

Coffee Cake

  1. Preheat oven to 350 degrees.
  2. Cream 1 cup butter and the sugar.
  3. Add eggs and vanilla and mix well.
  4. Add Kodiak Cakes mix, baking soda, yogurt, apples and cinnamon and mix until combined.
  5. Grease Bundt pan with the extra tablespoon of butter. Flour generously.
  6. Divide streusel filling into thirds. Sprinkle 1/3 mixture in bottom of pan.
  7. Spoon 1/3 cake mix over streusel and smooth carefully. Layer streusel and cake two more times, ending with cake.
  8. Bake for 50-60 minutes, until toothpick comes out clean.
  9. Cool for 10 minutes; invert onto a platter and serve warm or cool.

Streusel Filling

  1. Add all ingredients together and mix thoroughly.

Glaze

  1. Melt butter. Add all other ingredients and stir until smooth.
  2. Drizzle on cooled cake.
